Michel Couvreur's Clearach is a truly finessed single malt that's matured for two to three years in fresh sherry casks. Using a traditional solera process, where the barrel is never fully emptied and the new whisky is always added to the matured, each cask contains up to 25 years of whisky aging.
Michel Couvreur has been producing whisky in Burgundy since 1978, and has established himself as the region's authority on the subject. He takes the finest whiskies from Scotland and ages them to perfection in his secluded barrel caves. With such a limited supply, each bottle he makes is one of the ultimate treasures you can attain in the whisky world.
Cask: PX, Oloroso, Amontillado Butts & Half Butts
Typical to very young malts with almonds and frangipane (red jasmine) fragrance, nice grassy freshness with a slight touch of honey.
Lively in the moutm its maturation in wine casks, despite its young age, is revealing some silky elegance.
Possessig yound spirit's intense and lively characteristics, it displays the flavours of first vinous impregnations. Clearach is generally the name given to the new make spirit, just from the still, before the minimum required 3 years of maturation in wood.
