Cuvee Gastronome is so named because it is specifically designed to pair well with food. To achieve this ideal, the wine is bottled at a lower pressure than normal for Champagne, resulting in softer, less persistent bubbles. The wine is a blend of fruit from Chouilly, Cuis, Cramant, Oger and Vertus. Crisp yellow-fleshed fruits, flowers, almonds and spices are all woven together beautifully. This wine stands out for its inner perfume, sweetness and inviting personality
Appearance: Lovely transparent gold color. Steady stream of very, very fine bubbles
Aroma: Fresh nose of mild coconut, toasted bread and quince as well as sweet coffee.
Palate: Taut and crisp, this is in the dry Gimonnet style. It is expressive and mineral driven, all citrus and green apple skin. Alongside this tense character, there is an elegance, with its bright acidity cutting through the fruit. Very food friendly wine, also perfect as an aperitif, which will blossom throughout the meal and surprise your guests with its beautiful freshness and elegance, personality and balance.
Robert Parker 91: "This latest instantiation of what has become his signature blend, featuring lower-than-standard pressure, Gimonnet’s 2008 Brut Blanc de Blancs Cuvee Gastronome reflects a wide range of sites, more than half in (grand cru-rated) Chouilly and Oger. Stalk celery and cucumber, crabapple and lemon combine for an at once briskly refreshing and metaphorically cooling performance, wreathed in bittersweet perfume of iris and tinged with saliva-liberating salinity that renders a long, caressing finish compulsively next-sip-inducing."
