A 7-course wine pairing dinner with Paul Goldschmidt, the owner of Baronne Guichard, sharing with us his 7 fine wines from Pomerol, St. Emilion, and Lelande de Pomerol. The 7-course meal, including a pan-fried foie gras with balsamic glazed figs, open shell scallops, and black truffle soup, was prepared by Executive Chef Matthieu Bonnier.
With the tumbling of the Hang Seng Index, let’s leave the world of Margaux, Lafite, and Latour for the valued “unsung heroes”. Though not priced in the prestigious category, “Unsung Heroes” are the backbone of Bordeaux, offering reasonably priced, superior quality wines. They are the locals’ hidden Bordeaux gems.
October is the season of Hairy Crab. When it comes to wine pairing, Hairy Crab can be a challenge � delicate on the flesh, rich in roes, and a vinegar-based sauce that is both sweet and gingery. For our dinner, we wanted to try both the Chinese pairing and the Western pairing. We tasted 5 wines, including Mouton Rothschild�s premium white -- Aile D�Argent 2005.
The theme for the evening anchors on the Burgundy gems – Pinot Noir and Chardonnay. Besides being self-indulging, we were also ambitious – we wanted to compare the top Chambertin Grand Cru vineyards; to contrast the typically silky and feminine Vosne Romanee against the typically bold and masculine Gevrey-Chambertin; to see if a top Aloxe-Corton Grand Cru can overpower a Charlemagne Grand Cru.
